INGREDIENTS
For the salad:
• 500 grams Chickpeas
• 1 cucumber, chopped
• 6 mini tomatoes , chopped
• 1 red pepper, thinly sliced
• 1/2 red onion, thinly sliced
• 1/2 cup of Kalamata olives, chopped
• 1/2 cup crumbled Feta
• Salt
• Freshly ground black pepper
For parsley vinaigrette:
• 1/2 cup of virgin olive oil
• 1 tbsp. mustard
• 1 tbsp. lemon juice
• 1 tbsp. freshly chopped parsley
• Salt
• Freshly ground black pepper
INSTRUCTIONS
• Let the chickpeas into cold water overnight.
• Next day boil with their water till they are tender(If necessary, add cold water).
• Strain them and put them in a bowl along with the rest of the ingredients.
• Mix the vinaigrette ingredients separately.
• Pour the vinaigrette into the salad and mix.
